Why We Love This Product

Behind the striking good looks of that mosaic damascus steel lies a nimble, well balanced exceptionally functional knife. The edge is thin but slightly convex for better food release and effortless slicing of fruit, veg and meat. Many generations of handle design have led to this, our current favorite design which offers comfort and control in many positions, but specifically the pinch grip.

Hex Mosaic damascus Santoku Features:

  • Handmade in the U.K.
  • Damascus steel blade.
  • Takedown handle build.
  • Plenty of finger room under the handle.
  • Green dyed and stabilised York Gum wood handle.
  • Satin handle finish.
  • Food-safe wax coating.
  • Display stand.
  • Wooden box with fitted foam insert.
  • Thin / general purpose semi-convex edge.
  • Recessed, domed mirror pin.

Specs:

  • 185mm - 7 1/4” blade length.
  • 50mm - 1 7/8 “ tall at the heel
  • Weighs 175g - 0.39lb.
  • 80crv2 and 15N20 carbon steel
  • ~61hrc.

The blade has a hard, food-safe wax finish to help preserve the colouring and remove the need for oiling during daily use. The handle can be removed for repairs and maintenance and with an heirloom fit, it should last a lifetime. Please check out the Maintaining blades page for more info and pick up some protective wax to keep all your blades pristine. If you have any further questions, please feel free to email us directly.

This is a tough steel so you don’t have to be too worried about chipping it despite the thin edge. Like most carbon steels, it is easy to sharpen and keep a hair-popping edge.
